Why is Smoked Salmon Contaminated with Listeria?

There have been several recalls of smoked salmon for Listeria monocytogenes contamination in the past several weeks. There is zero tolerance for only two bacteria in ready to eat foods such as smoked salmon: Listeria and Salmonella. These are foods that are processed in some way, but are eaten without reheating. So why is smoked salmon, more specifically cold smoked salmon, susceptible to bacterial contamination? The FDA has specified processing parameters that are necessary to control pathogenic bacteria presence in smoked fish. Listeria monocytogenes is widely distributed in the environment and occurs naturally in many raw foods. King Soopers, City Market, Ralph’s Pull Smoked Salmon

A Listeria recall has prompted King Soopers, City Market and Ralph's stores, which are all owned  by The Kroger Co. of Cincinnati, of  to pull smoked salmon from store shelves. Specifically, the stores have removed 4 oz packages of  LASCCO Cold Smoked Nova Atlantic Salmon (Product of Chile) with UPC # 0 72840 01751 7. Four Smoked Salmon Listeria Recalls In Three Months

A Sam’s Club recall of smoked salmon issued at the end of December is one of four smoked salmon recalls issued in the last three months for possible contamination with Listeria monocytogenes.  Two possible illnesses have been reported in association with one of these recalls. Here's what consumers need to know. Listeria bacteria can and do turn up in all kinds of foods including raw meats, raw fruits and vegetables and raw dairy products. It also appears in foods that are cooked but become contaminated after cooking such as deli meats, hot dogs, soft cheeses and smoked seafood. Sam’s Club Listeria Smoked Salmon Recall

Potential Listeria contamination in certain smoked salmon products sold at Sam’s Club stores nationwide has prompted the discount retailer to notify its customers of a recall. The products under recall were produced by Tampa Bay Fisheries Inc. of Dover Fl. and Multi-Export Foods. Inc of Miami. The recall covers all smoked salmon products produced since November 14, 2012 and sold under the brand name  Paramount Reserve at Sam’s Club stores in 42 states and Puero Rico. Specifically, smoked salmon "twin packs" (two 6 oz vacuum packages in a cardboard sleeve) with UPC number 6 88264 86705  and the following lot/sublot/batch numbers: 931-59733-2, 933-59753-1, 933-59754-2, 875-701413-1 and 890-701413-1.
