A Recurring Salmonella Strain and a Secret, Deadly Ground Beef Outbreak

Two years before a 2018 Salmonella outbreak linked to ground beef produced by JBS Tolleson triggered one of the largest beef recalls in modern history, another outbreak, a secret and deadly one was linked to the same strain. The deadly 2016 outbreak was never announced and no recall was ever issued because the U.S. Department of Agriculture's Food Safety and Inspection Service (USDA FSIS) said traceback records didn't conclusively point to a single establishment. So, contaminated ground beef was sold to consumers and 106 people in 21 states got Salmonella infections. Forty-eight percent of the patients were hospitalized, and one person died. One year after that outbreak ended, the first illness in the 2018 outbreak was reported. That outbreak, which was publicly announced, eventually … [Read more...]

What You Need to Know About Ground Beef Food Safety

In our new series helping beginning cooks learn how to prepare food safety, we have been focusing on foods that may be inherently risky; that is, foods that are commonly contaminated with pathogens. This is what you need to know about ground beef food safety. For years, food safety experts have been telling consumers to stop cooking ground beef less than well done, or 160°F as measured with a food thermometer. There. have been many Salmonella and E. coli outbreaks over the years linked to raw and undercooked ground beef. Consumer Reports issued a report in 2015 about the risks of rare ground beef. They found that up to 28% of Americans eat rare and raw ground beef. Between 2002 and 2012, there were 80 E. coli outbreaks linked to ground beef that killed five people. Since then, … [Read more...]

CDC Report: Salmonella Newport Shows Decreased Sensitivity to Azithromycin

In the current CDC's Morbidity and Mortality Weekly report, some bacteria in a Salmonella Newport outbreak that was linked to beef and to a cheese imported from Mexico had decreased susceptibility to azithromycin and nonsusceptibility to ciprofloxacin. This susceptibility has emerged recently, because that serotype with decreased susceptibility to azithromycin wasn't found in any isolates in the National Antimicrobial Resistance Monitoring System (NARMS) surveillance before 2016. A genetically distinct group of MDR Newport isolates was identified in the two outbreaks. This resistance is rare among Salmonella serotypes that cause illness in the United States.  Azithromycin is recommended to treat Salmonella infections orally; until 2017, decreased susceptibility to this antibiotic … [Read more...]

And six of these outbreaks are still ongoing.
